Celler AiBar (AiBar 1895 S.L.) is located in Darmós, within the municipality of Tivissa, and produces DO Montsant wines from grapes grown on the family's La Sènia estate, just below the village. The winery's name combines the initials of the owners' daughters, Aitana and Bàrbara, with the year 1895, honoring ancestors who had to renew their farming methods in the wake of the phylloxera crisis.
Alongside the vineyard, the La Sènia estate also has olive and fruit trees, and the winery produces its own olive oil in addition to wine. The family treats each product as a distinctive project, from winemaking through label design, aiming to connect the wines to the region's literary, musical and artistic history and culture.
The estate preserves remains of an old olive mill, including irrigation channels and pressing equipment. The winery offers family-led guided tours of the whole property, covering the production process and finishing with a tasting on site.
