Acústic Celler was founded in 2004 in Marçà, within DO Montsant, by Albert Jané, linked to the Penedès winery Jané Ventura, with Núria Ruiz serving as winemaker in the early years. The project is built around the concept of "acoustic wines, without electricity": traditional viticulture focused on native varieties — garnatxa negra, garnatxa peluda, garnatxa roja, garnatxa blanca, carinyena and macabeu, among others — grown on old vines aged 25 to 95 years across Marçà, Els Guiamets, Capçanes, La Serra d'Almos, Cornudella de Montsant and El Masroig, at elevations of 300 to 700 metres.

The winery manages a total of 54 hectares (42 owned) and in 2021 opened new facilities at Finca l'Hostal, near Marçà, designed with sustainability and natural insulation in mind, with areas for winemaking, barrel and amphora ageing, and bottling. Its wines include Acústic Negre, Acústic Blanc, Acústic Rosat, Braó, Auditori and Auditori Blanc; the latter received a 95-point score from critic Robert Parker, one of the highest ratings achieved by a Catalan wine.
