The Cooperativa de Cabacés was founded in 1933 by 51 local farmers who pooled resources to jointly process and sell their harvest, chiefly olives and grapes. Nearly a century on, it remains the economic and social engine of the village: of Cabacés's roughly 300 residents, 230 are cooperative members, giving rise to the local saying that "the cooperative is the village and the village is the cooperative."

Although it is registered as a grower within DO Montsant, the cooperative's public-facing activity - its shop, guided visits, and the recognition it has received - centers today on extra virgin olive oil, made predominantly from arbequina (95%) with local varieties such as rojal and negreta, sold under the Baronia de Cabacés and Fusió d'Aromes labels and also covered by the DOP Oli Siurana. We found no detailed public information about specific grape varieties or named wines bottled by the cooperative.

Visits are possible by prior reservation (weekdays and weekends, with guided tours on Saturday mornings), and every December it holds an oil fair with tastings and olive-picking.
