Saó del Coster is a winery founded in 2004 in Gratallops, at the heart of DOQ Priorat, by a group of friends passionate about wine, with the aim of working the vineyard in a traditional way. It is based in an 18th-19th century farmhouse in the middle of the village, and farms its plots — including "Planassos" and "la Pujada", both in Gratallops — on terraces and slopes of slate (llicorella) soils.

The winery has farmed biodynamically since its founding, following the lunar calendar and avoiding chemical products and, largely, machinery, in order to respect natural cycles and express the terroir. The predominant varieties are Grenache and Carignan, many vines over 60 years old, alongside small amounts of Cabernet Sauvignon, Merlot and Syrah. It produces wines including "S", Pim Pam Poom, La Pujada, Terram and Planassos.

In 2018 the project went into liquidation, but a year later Jöel Chevallaz and Patrick Pochon bought back the assets and relaunched it. Today visits and tastings can be booked at the winery, with classic or combined vineyard-and-cellar options.
